Welcome to the test kitchen -- Preface -- The basics of gluten-free cooking -- A good start -- Grains -- Pasta -- Comfort foods -- Yeast breads, savory loaves, and pizza -- Cookies and bars -- Pies, fruit desserts, and tarts -- Cakes.
Successful gluten free recipes require more than just new ingredients. The cooks at America's Test Kitchen tried thousands of recipes (most were pretty awful) to figure out the secrets to making favorite foods without gluten. This landmark book tells what works, and why, so you can successfully prepare lasagna, fried chicken, and fresh pasta in your kitchen. And, the cooks at America's Test Kitchen have reinvented the rules of baking to produce amazing cookies, cakes, breads, biscuits, and more.

Good start to gluten-free cooking and baking submitted by EJZ on August 3, 2018, 9:43pm This was one of the first books we tried when diagnosed with celiac, and we still use many recipes in it. The all-purpose flour blend suggested is good for the most part, and the tips and science knowledge is also nice to have. All the recipes are easy to follow, but like most ATK recipes they can end up being too fussy and call for too many ingredients and steps for the practical home cook.
I highly recommend the English Muffins and Bread recipes.

Good submitted by waffleistasty on July 29, 2019, 6:51pm Good

Excellent submitted by kelseylutz01 on July 17, 2023, 10:55pm The bread is excellent.
